Has my honey gone off because it has set?
No. Setting is a change in texture, not a sign that the honey has spoiled. The jar can look paler, firmer or grainier and still be perfectly good to eat. True spoilage is rare and looks different: a sour or alcoholic smell, unusual froth, or signs that water has got in.

Have extra sugars been added to the jar?

No. The crystals come from the honey’s own glucose as it comes out of solution. Nobody has stirred in caster sugar afterwards. A set jar is not “honey plus sugar”. It is honey that has crystallised.
That is why the flavour still tastes like the original honey, not like a bag of white sugar mixed into a pot. The sweetness was already there. It has simply changed shape. If someone has added extra sugar to a jar, that is adulteration, not ordinary set honey from a raw local harvest.
Should raw honey stay runny forever?
No. The opposite is often true. Raw honey still contains the tiny natural particles that help crystals form. People often taste a raw set jar, compare it with a bland squeezy bottle, and conclude that set honey is “better for you”. They are usually comparing raw honey with processed honey, not set with runny.

Does supermarket honey stay runny because it is better?
No. Some supermarket honey stays liquid for years because it has been processed for appearance: heated, finely filtered, blended from many sources. Some cheap jars raise a bigger question about whether they behave like honey that has come straight from the comb.

Is set honey the same as creamed honey?
No. Set honey crystallises on its own. The crystals can be fine or a little grainy. Creamed honey is guided so the crystals stay small and the jar stays soft and even. There is no dairy in it.

Does the fridge ruin set honey?
No. The fridge will not harm the honey. What it often does is make the set firmer, so the jar is harder to spread. A cool, dry cupboard is usually nicer for everyday use. That is a texture choice, not a safety rule.
Can I not use set honey in tea?
You can. It takes a little more stirring than runny honey. Put the honey in the cup first, add a splash of hot tea, stir until it loosens, then fill the cup. You do not have to melt the whole jar.
